Another healthy and delicious meal that is easy to manipulate to your liking is a Sweet Potato and Broccoli Hash. Start by measuring out 1 cup of water and a 1/2 cup of quinoa. Bring the water to a boil in a pot. Once it is boiling, add the quinoa. Heat the water back to boiling, and reduce heat to simmer/low and cover. This will cook in 8-12 minutes.

While the water is heating up for the quinoa, chop up some sweet potato (2 whole potatoes), some broccoli heads (1 or 2 whole heads), and an onion (yellow or red). Make sure you buy fresh broccoli from the produce section. Do not use frozen or pre-cooked/marinated packaged crap! Use a non-stick skillet with 1 tablespoon of olive oil (or oil of your liking (no vegetable/canola/corn/crap oil please!)). Cook the sweet potatoes and broccoli at medium/low heat covered for about 15 minutes or until the sweet potatoes are fully cooked. Uncover and stir every 2-4 minutes.

Once the quinoa is fully cooked (all/most of the water has been absorbed by quinoa), add the cooked quinoa to the skillet with the veggies. Mix around while still on med/low heat. Once the quinoa is mixed into the veggies, turn off the heat. Put the hash into a bowl. Cut up an avocado and add it to the bowl for some added flavor and healthy fats!

Season and spice it up with some cayenne, sea salt, and/or black pepper! Any hot sauce would be a good addition as well…

Some ideas to add or adjust to this recipe are:

-Top it with an egg

-Add eggs and scramble!

-Cook some bacon, ham, sausage, etc. instead of using oil to add some meat/protein/natural fat to it! (You would do this in the skillet prior to adding the chopped up veggies.)
